Cured’s Cheese Fondue Recipe

2/3 lb Challerhocker

2/3 lb Essex Comté

2/3 lb Gruyere 1655

2/3 lb Reading Raclette

3 ounces of your favorite fruit Brandy. We love the Leopold Brothers Cherry liquor as well as Peach Street Distillers Pear Brandy.

Directions: Remove rind and grate your cheeses.

Pour yourself a glass of wine.

In a cast-iron pot or fondue pot, over medium heat, add Leopold Bros. Maraschino liqueur.

Add your cheeses. Slowly stir until all the cheeses have melted together into a single pot of deliciousness.

We recommend continuing to “taste” your glass of wine as you go through this process.

Using long forks or skewers, dip chunks of bread, cornichons, tart apples, salami,  or just about anything else you have lying around the house into your pot of cheese.

Over the course of the evening, if you don’t have a proper fondue pot, simply return the pot to the stove periodically for re-melting. One of the secrets of fondue is enjoying the crusty cheesy goodness that forms on the bottom.
