Cured’s Thanksgiving Dinner

Your Curated Thanksgiving: The run down.

First up, TURKEY! We are sourcing Turkeys from Organic Prairie, a farmer-owned cooperative committed to providing the healthiest, most wholesome meat, raised humanely in accordance with organic principles and practices, respecting the dignity and interdependence of human, animal, plant, soil and global life. Organic Prairie were pioneers of the organic meat industry. They began producing their delicious meats—without the use of antibiotics, synthetic hormones, or pesticides—back in 1996. At the beginning, they insisted on third-party organic meat certification, long before federal organic standards were established. They were the first in the industry to ban animal by-products from our cattle’s diet, and played a vital role in shaping federal organic meat certification standards—the strictest in the industry. All of this is to say these guys are the real deal, and we’re excited to have Organic Whole Young Turkeys of which even the pilgrims would approve. We’re taking these turkeys and dry brining them, then wrapping them up in a foil pan that is ready to pop in your oven come Thanksgiving Day. Brined turkeys cost $6.95/lb and are coming in between 14-19lbs. We recommend around a pound and a half per person.  Turkeys must be ordered by Friday November 10th, and will be available for pick-up or delivery on Wednesday the 22nd!

On a side note, if you’re hosting a small Thanksgiving as we often do, and not feeling like attacking an entire 15lb turkey, we’re offering a Duet of Free Range Poussin (aka, lovebirds) for 2, stuffed with Organic Garlic, Thyme and Lemon, trussed and ready to be roasted at home. We’ve done these in the past when we host smaller thanksgiving parties and they are always delicious, and quite fun to put one perfect little bird on each person’s plate! Game Hens cost $17.5 each.

Tender Belly Heritage Breed Ham: Save a turkey, eat some ham 😉 We’re equal opportunists here at Cured, so in case you’re feeling it for a decadent spiral sliced ham instead of turkey, we’ve got you covered.  Spiral Sliced and Ready to be heated up at home. $70 for an aprox 7lb ham, feeds up to 14 people, but make for amazing leftovers.

Stuffing, Salads and Sides! We realize that there is no way to recreate every favorite dish, so rather we’re taking it upon ourselves to share a few of our favorites that promise to make for a well-rounded, delicious, and decadent day. Sides are offered in Small (up to 6 ppl), Medium (6-10 ppl) or Large (10-14 ppl) and designed to be either unwrapped and served, or tossed in the oven (cooking instructions included) to warm and/or finish cooking on the day of.  They include:

Pies!! One of the smartest things we’ve learned over our years in the world of food is to outsouce what someone else can do better. And does it get any better than the sweets and treats from Boxcar Bakery? We whole heartedly recommend taking advantage of Milli’s supreme baking skills and treating yourself to a pie or two! Order at the coffee counter in the weeks ahead!

Cheese and Charcuterie Board in a Bag! They say that idle hands are the devil’s tools… There is nothing worse than too many cooks in the kitchen on Thanksgiving Day, so keep you guests out of the kitchen and nibbling on cheese and charcuterie instead!  Our ‘Board in a Bag’ is essentially one of our signature cheese and charcuterie boards, deconstructed to more easily be stored in your fridge. All you need to do come Thanksgiving Day is lay your goodies out on your favorite board or platter, and sit back and watch your guests devour! We recommend $8 per person for this day with so much other food  on your table, but can create something delicious at any price!

Wine!  Every Thanksgiving we offer a Thanksgiving 4 Pack of wines, the things we’re excited to bring home ourselves, that we know each and every family member, no matter their tastes, will approve of, and that don’t break the bank, especially as a bundle.  This year we’re offering four wines we’ve tried in the past few months that simply said THANKSGIVING to us the moment we tried them. We’re starting with Robert Serol’s Gamay based Pet-Nat Sparkling Rose, the Turbullent.  It’s a bottle of bubbly that is made to kick off any event, and despite it being from France, we’re pretty sure he made it with Thanksgiving in mind 😉   Next up is Ronco delle Betulle’s Ribolla Giala.  This historic Friulian estate made what could be their best example of 100% Ribolla to date.  Light skin contact gives it amazing structure and concentration, but it delivers it in a package that even Aunt Mildred would approve of.  Von Boden, a German winery from the Mosel, is known for their Rieslings, but this Pinot Noir, Merlot and Cabernet based rose could be the best rose we’ve found to date for roster of foods that grace a Thanksgiving table. Powerful, yet only 11% alcohol, we might be bringing home more than one.  Last, we’ll be featuring Brand Family’s Mourvedre from California.  A grape that typically makes a big, burly, muscular wine, Ian Brand makes an example with stunning elegance, and tremendous food friendliness.  Normally these wines together would be $115.5, but we’re bundling them at $100 on the dot and hopefully taking some of the stress away from choosing the perfect wines for this big day at the same time!

Anything else?  Would you like anything else bundled and brought along with your Thanksgiving feast?  An extra bag of salad greens, an assortment of chocolate, a bottle of your favorite olive oil? Let us know and we’ll have it all bagged up and waiting, or brought right to your door…
