Good Morning Friends of Cured,
We hope you all enjoyed the beautiful weekend, hot as it was, and found relief in a mountainous hike, picnic by the pool, or bottle of rose under the shade of a tree. July is in full swing, the riders in the Tour de France are almost half way into their 3 week saga, and we’re loving eating and drinking along with them stage by stage as they suffer and we imbibe 😉 Good thing we still have 2 weeks and 4 stages of goodies yet to come! We have a few fun happenings for you this week that we hope you’ll enjoy!
Friday Night Dinner: Ratatouille! We can’t wait till Holden is old enough to curl up on the couch and watch the wonderful Pixar creation that is the animated film Ratatouille while we teach him how to cook the scrumptious French feast…In the meantime however, we’re lucky our chefs are so talented and are doing all the hard work for us, chopping, simmering and stewing for hours on end, to feed us an epically delicious, traditional Ratatouille for this week’s Friday night dinner, complete with local Farmers Market veggies. Enjoy it alongside a Green Tomato Frittata, a baguette, a Chilled Farro Salad with Shaved Celery, Dill, Walnuts and Yogurt, and a Nectarine Gazpacho. We even have Local Sweet Corn Flan to round out your meal! Dinner for two costs $57 and will be hot out of the oven at 5:30. As always, dinners sell out quickly to call today to reserve yours.
Continuing Education! The Next round of cheese classes. Last night Jess taught yet another wonderful cheese education class on American Artisan Cheeses. One of the highlights of my month is reading through her notes and getting a quick little insight into the breadth of knowledge and passion she teaches in these monthly classes. Many of you have been taking advantage of these classes over the past 6 months and we are excited to release the schedule for the next two months! For those of you unfamiliar, our manager and Certified Cheese Professional Jessica Beer teaches the monthly classes at Cured West from 6:30-8. Each class takes you on a culinary journey though the history, make process and nuances of the various cheese subjects covered. Classes cost $55 per person and all include a flight of cheeses, more than a few sips of wine, and some serious education to boot!
Monday August 8: Alpine Cheese! This class is back by popular demand, taking you into the famous Swiss and French Alps. Many consider these massive mountain cheeses to be the best cheeses on the planet, and while we love all our cheeses equally, we do agree that the stories behind these cheeses are some of the most romantic in cheese history. During this tasting we will discuss how and why Alpine cheeses came to be, the difference between Alpine cheese and Alpine style, and the many culinary purposes that make these cheeses a must have on hand at all times.
Monday September 12: Blue Cheese: For the September Cheese Class we will explore the always delicious but sometimes intimidating world of Blue Cheese. We will discuss the history of the world’s most famous blue cheeses: Roquefort and Stilton, New World Blues inspired by the classics, unique fun innovations and the wonderful and vast world of blue cheese pairing and culinary application.
